The history of Mexican food began in 1519 when the Spanish Conquistadores entered the Aztec capital of Tenochtitlan and found a flourishing culture with an excellent cuisine filled with palate-pleasing spices, presented beautifully, and unparalleled in flavor. In 1520 the Spaniards added beef, chicken and pork into the Aztec and Mayan cuisine. All the various ingredients from Europe and native to the Americas combined to create the foundation of what we consider to be Mexican food today.
